Cinco de Mayo Mother’s Day Brunch

Come on to My House was a guest on KATV’s Saturday Daybreak today to TACO-about some Cinco de Mayo entertaining ideas that could also double as an easy Mother's Day brunch. The link above takes you to the video of the segment.

Here’s the scoop… I LOVE to entertain, but my gifts aren't necessarily in the culinary arts, they're more in the decorations and planning so when group of my girl friends got together for a Cinco de Mayo themed brunch I knew this was a menu I would go back to again and again because it is SO EASY and looks beautiful. 

I start with some vintage china. Seriously, they are as old as me because my mom got these when I was a baby and added them to my Hope Chest stuff. The past few years I’ve been able to pull these out for parties and baby showers!

Recipe

  • 1 avocado per guest, cut in half

  • Mixed greens, lettuce

  • Limes

  • Tomatoes

  • Lump crab meat

  • Cilantro lime or chipotle lime dressing

  • Optional; jalapeños, tortilla slices, sweet corn, black beans

Step 1: lay out a bed of lettuce on the plate.
Step 2: top with avocado halves
Step 3: squeeze lime half over avocado halves and lettuce
Step 4: add heaping tablespoon scoop of lump crab meat to tops of avocados
Step 5: add embellishments such as tomatoes and optional items listed above
Step 6: drizzle over salad dressing

For beverages, margaritas or a great Mexican punch.

Dessert is easy! Just take a store bought cake and add assorted berries, which are great because if I have someone like me with a gluten or dairy allergy they can always eat the fruit, then I add some chocolate-- chili chocolate works great for this Cinco de Mayo inspired brunch. Just break the chocolate into jagged pieces and press them into the top. Quick tip, use a cake stand or colorful container with an edge or lip to catch any of the goodies that cascade down. The finishing touch, festive flags! Ole!!
